Conspiracy Chocolate’s chefs and chef Dennis Pang developed a summery menu centred around a luxurious ingredients rarely found in savoury food: cacao.
Cacao is one of humanity’s ancient foods and its application in modern culinary art is often uninspiring due to the challenge in taming its vast complexity.
As chocolate makers we’ve dreamt of a savoury meal that does justice to cacao’s robust range. In this first ever concept we wanted to break boundaries and expectations by avoiding the predictable savoury uses of chocolate and apply the same experience-driven innovation that drives Conspiracy’s chocolate-making into a hot kitchen.
The menu develops from lighter expressions of the cacao plant increasing intensity through to savoury with more full-bodied cacao and chocolate flavours and ultimately, moving to sweeter version of the highest quality, single origin chocolate.
The bright and summery atmosphere of the menu is expressed though an earthy-fruity flavour theme, characteristic of this Dak Lak terroir cacao.
